During the first two seasons, we see Stefan Salvatore portrayed as this martyr who fights with his blood lust on a daily basis. The finale of season two and all of season three are definitely game changers. We get to see what he went through since transitioning into a vampire. His deep dark secret is that he's a "ripper". Rippers are ruthless killers who don't stop until their victims are drained. The screams of the victims are encouraging to them. We learn that Stefan feeds so hard, his victim's heads come off. Sounds enticing, right? The 1920's were his glory days and he really embraced his ripper status. He had an apartment in Chicago where he would write names of all the people he killed on the wall just so he could relive the kill. While with Rebekah Mikaelson he made a man, Liam, drink a glass of his wife's blood. To him, Klaus, and Rebekah it was entertaining. In the premiere of season three he killed a woman Damon sincerely cared about just so he'd leave him alone. We see him turn off his emotions and push everyone away from him. Klaus uses mind compulsion to make him turn off all emotions completely. With feelings of fear and guilt gone, he's capable of doing anything and hurting anyone. Most viewers prefer "Ripper Stefan" to "Martyr Stefan". Actor Paul Wesley has repeatedly said he prefers Stefan from season three as well and hopes to see him reappear in season four.
